They stopped doing things like that because it takes forever and it's obnoxious.
Also because they completely missed the point of stuff like summons and other cinematic attacks which is to be hard to pull off/use but also be really fucking powerful (at least powerful enough to justify the amount of time sunk into actually using the attack instead of just spamming attack). Kinda the big failing of the Shonen mindset really. When your only solution is to bring a bigger gun and hope you've had a training montage recently, fights tend to get really fucking boring really fast. And Final Fantasy has always been really fucking bad about this.
Anyways, to contribute to the topic on hand, I'd like RPGs that are written not terribly.
For the genre that's all about telling a story, most of the stories either end up being uninspired, tepid, a clusterfuck, fanfiction grade crap, or an excuse for soft core tentacle porn (I'm looking at you Time and Eternity). Video games aren't movies, they aren't books, and they're certainly not television and you've got to stop writing for them like they are.
