Inspired by Vanguard's musings in the haps thread.
Dinner was a salad of greens and poached chicken breast. Lightly boil the chix for about 20 min in water. Add some salt n peppah! or not I don't care what you do.
Shred it up like Slash in November Rain and serve over greens of your choosing.
Optional bad mammba jammba salad dressing if you have taste buds. Mix together:
soy sauce
sesame seed oil
red wine vinaigrette
and siracha red chili sauce
Save the yellowy chix water. Hey, that's broth. Make a soup or somethin!

Ooo, nice stuff!
I busted out a sweet series of recipes for a date last week that went over pretty well, thanks to the epicurious app. Usually I like to craft things of my own accord, but it's nice to try new things so I can get inspired in my own inventions. Anyways, I definitely recommend these ones:
Roast Pork Tenderloin with Apricot-Miso Glaze
Grilled Sweet Potatoes with Lime-Cilantro Vinaigrette
along with some satayed green beans and for dessert
Banana Nut Bread
. In this one, I tweaked it based on some of the feedback and what I had on hand. Used 1/3 white sugar, and 1/3 brown sugar and 3 ripe bananas instead, and almonds cause I like them better/they're cheaper.
Finally, all this was made dairy-free since I'm lactose intolerant, so I had almond milk and Crisco going on in instead. Worked like charm! Definitely recommend all three

This is a great salad for warmer weather.
1 Romaine Heart
2 Avocados
1 Red Pepper
1 Red Onion
Dried Cherries
Pecans
Cut the romaine heart to a size you can actually eat. Cut the avocados into chunks. The easiest way to do this is cut it in half, de-seed, and cut a grid pattern into it, then scoop the chunks out with a spoon. Roast the red pepper. Only use about half the red onion, but cut to your preference. Chop the pecans. Combine in a salad bowl. Top with dried cherries. As an optional ingredient, you could add grapefruit chunks.
For the dressing, mix a light oil (Safflower or vegetable), squeeze two limes, add a clove of crushed garlic, and a pinch of cumin. Serve on the side.
I usually pair this with a baguette, sliced and grilled in a little bit of olive oil and oregano, and some smoked Gouda cheese.

In general, lots of fresh vegetables, some fresh fruit, healthy servings of protein. If you have an actual sleep disorder, consider taking melatonin, which is the chemical your body produces naturally that makes you feel sleepy.
Really, just avoid lots of sugary, processed foods. That means soda, and any meals that come out of a box.
Also, getting on a somewhat consistent sleep schedule and exercising will do wonders for this.

My sleep schedule has been consistent for about a week or so (i just have problems staying asleep and am tired throughout the day), and I've been walking every day. From what it sounds it probably is my diet or at least that has a lot to do with it. I haven't ate healthy since I've been unemployed :(

A week is not much of an indicator. How much sleep do you get? what time do you go to bed?
As far being tired throughout the day that is directly linked to what you're eating for breakfast and exercise. I notice that when I'm consistently getting exercise I have more energy and can afford to stay up a little later and feel less groggy throughout the day.

i go to bed an 4 and wake up at 11:30. Though I don't eat anything for breakfast I usually wait a few hours and get lunch. Perhaps I should get something when i get up.

You need to eat within the first hour of being awake as your first meal is by far the most important. The reason being is that it starts your metabolism. If you don't eat, your metabolism never reaches its full potential during the day, meaning you store more of what you eat as fat. It also means you're not getting a lot of energy from your food.
A really simple, easy breakfast is Greek yogurt with granola. If you have a little more time, cook an egg, top with tomatoes, avocado, and radishes. A piece of wheat toast with some jelly isn't bad, either.

Staying hydrated from primarily water will give you lots more energy. It also gives your metabolism a slight boost.
You should be drink a cup of water every 1-2 hours.
