So I found someone who's got the Japanese version who vaguely answered this question for me. It seems that the different dolls are unlocked as you progress down the various quest lines. I don't think he/she speaks very good japanese though so there could be all kinds of details they're missing out. They did make it clear that they were playing for quite a while before unlocking the first one though.

I also heard humans only go to lvl60 but the Skells are used for the bigger badder fights which...makes a lot of sense actually.

I do like the direction this game seems to take.  I like that, less like a standard RPG with dungeons and goblins, this seems to take full advantage of the plot and is more of a "world exploration" game in its fullest.  The backlack backlash (funny typo) about a "lack of dungeons" is surprising and totally unwarranted for the KIND of game here.  I'd actually argue that, in some sense, dungeons don't really "fit" (unless they're part of the environment like XB1 sometimes had)

Because RPGs have dungeons.

...*sigh* I guess if you get really particular, I guess it's like how people complained about the lack of towns in FF13, something a lot of us complained about.  Still, I think the sheer depth of exploration should make up for that.  And I agree, the few in XB1 DID feel out of place... mainly because they were just more constricted/smaller maps (I actually liked Mechonis being a sort-of super-dungeon)

Well, not all RPGs have dungeons... or world maps, or towns, or much free movement (being menu-based) or even a party. It is just the basic and often misinformed ideal that will shatter for anyone who has played more than a dozen of these (unless they only stuck to something like Tales and FF).

The issue with FFXIII's towns though was more symptomatic of a larger and deeper issue. Namely that the game (had it focused entirely upon Lightning or made it so that you could switch out your character) felt like one was playing a menu based version of Devil May Cry or something. Like there's very little difference between running down the hallways of FFXIII and running down the mean Streets of Rage, busting badguys standing in your path like they punks they are, eating fully cooked whole roast chickens that popped out of a trashcan or popping soft-drinks found in floating balls, and each stage having its own boss to rumble with. Really, if instead of picking paradigms, you input commands to use a sequence of attacks and spells and imagined Lightning as the speedy lightweight, Sazh as the middleground balanced character and Snow as the heavyweight bruiser, you'd literally have a Final Fight clone in the making (with the RPG growth mechanics consisting of getting more Health, Damage Output, Moves and capacity to perform Longer Combos; you have something more akin to River City Ransom). Then you realize that yes, Squeenix took half a decade to make a very pretty but glorified sidescrolling brawler.
In my vision, I see that one of us is going to KO the other.

This is something that bugged me with Xenogears way back. It eventually turned into all mechs all the time.

But then, mech combat sucked in Xenogears.

Just level then up to the limit break and have cannons around for boss battles.

Argh, I always 'take a break' from FFX when it comes to the hurdle between Sin and fighting Tonberry's for ridiculous amounts of level ups.

And then there's Xenosaga III where there's too LITTLE mech combat which was MORE ENJOYABLE than the on-foot combat and aaaaaaaaaaaa

Am I misreading or did you just say you hated them but they're also the best in the series?
