While Bethesta games aren't that stable out of the best, I think most people give them leeway as the scope of their games are by far the most ambitious.
Given enough time and millions of users reporting the bugs, they are usually become rock solid.
That said, other than some funny and weird shit happening, my first Skyrim game didn't encounter anything that broke it.
The worst that happened to me was a bugged quest that didn't remove itself from my quest log even after finishing it.
Also, backward flying dragons and mammoths raining from the sky aren't bugs to me, they're hilarious features =P
