Almost every game has something you can miss.
I'm pretty sure Wild Arms 3 had missable items. I remember a FAQ saying I needed a particular item to make a boss fight easier, but I couldn't get it anymore.

Well, that's true, but in games like FF8 where you can miss many of the GF's which are kinda critical to the game is just asinine. I like to play at my own pace and explore as I go along, rather than get pushed along by the story.
Also, I don't think XS2 had anything missable :D

XS2 also sucks ass.
If you mean
important
abilities, then no, the whole game is managed by the license board, which contains pretty much everything. You can't miss any abilities because they're all potentially unlockable from the start of the game.

I'll probably pick it up. I loved FFX and the combat from the demo seems fun enough. Classic FF but with a twist.

^ With regards to FFVIII, Daschrier, you can get any GF's you missed earlier in the final castle. You just have to draw them from the mini-bosses near the end. Of course it would take time to level them up and get the stat bonuses they give so I understand your point.

I believe XS2 is the
worst
when it comes to missable items actually. Sure, you can enter and re-enter dungeons, but you can take those sidequests and possibly fail them, and if memory serves right... Be unable to take them again.
I do consider it dumb for the FFs to make items missable - I say do something similar to Golden Sun, and if you miss a one-of-a-kind item, make it spawn elsewhere. Kinda like the Torch in Zelda:LttP, or Djinns in Golden Sun 2 if you either don't have a GS1 save or failed to get them all that time. Not enough to make me not get it, but irritating never the less.

Well I guess you are right about XS2. That's why I always saved before doing those so I could retry. It's not like in ff7-9 where the game is so scripted and pushes you along that there are many things you just can't ever do again unless you do it right then and there.

Here's a potential solution for your "missable stuff" issue:
Don't miss it in the first place?
I mean, come on people, how many YEARS have we been playing RPGs for? Is it really that hard to do a thorough exploration of a given area? :P

It's called patience...something many of us, myself included, lack when it comes to progressing the story of a game.

Yeah, especially with random encounters :p
Plus walking back and forth talking to people trying to trigger cutscenes or whatnot can get very boring.

You know complaints are getting more and more inane these days.
People on Grandia 3: "It sucks because Yuki uses a sword."
People on Tales of Legendia: "It sucks because Senel doesn't use a sword."
People on current games: "They're not CHALLENGING enough."
People on SMT games: "They're too hard."
People on FFX: "Too linear, there's no sense of exploration."
People on other games: "I don't want to miss any items, exploration sucks."
Some of you people should just stop playing games altogether.
