Steve Bello
Liquid Tension Experiment (Dream Theater side project)

Some good Nintendo-core bands:
The Minibosses (I LOVE their 10 minute MegaMan 2 medley)
NESkimos

And if you haven't already, check out The Black Mages.  It's Uematsu's "band" and they do some ripper FF stuff.  Tsuyoshi Sekito plays guitar and that's a selling point for me, since he's quite an underrated composer.

The ones I've heard of from the ones you've said I love like LTE and The Black Mages and I'll check out the ones I haven't heard. I need to listen to more Metroid Metal while I'm at it.

Oh, song of the moment is "Question and Answer" by Jasun Tipton.  This is off his solo album "Seduction" and is an amazing song.  It's instrumental.  This young man is quite the up and coming talent on guitar, whether doing this jazz/fusiony solo stuff or with his prog metal band Zero Hour.
