Skyclad - Spinning Jenny
Either of the acoustic versions are excellent. Although I'm fond of the fiddle only version as it sounds almost like Doom meets vidya.
Demons & Wizards - Fiddler on the Green
Saddest song I've ever heard and the best song Jon Schaffer will ever write.
Ayreon - Dragon on the Sea
Lana Lane has the best voice ever.
The Mediaeval Baebes - Scarborough Fayre
Simon and Garfunkel can take a hike.

Definitely "Lady In Black" by Uriah Heep. It's just two fucking chords over and over, but they're two good chords. :P

Red House Painters - Drop; probably the saddest song you'll ever hear.
City & Colour - Bring Me Your Love (album); a warm, mature, and uplifting all acoustic album and one of my favorites of this year.
Green Carnation - Acoustic Verses (album); a dense and atmospheric album with a 15-minute centerpiece that will seriously blow you away.
Neutral Milk Hotel - In the Aeroplane Over the Sea (album); there are few albums that are either happier or more depressing than this one.
I didn't mean to end up listing albums, but each of these are great and I highly recommend each.

John Fahey - "Poor Boy A Long Way from Home"... I'm pretty sure this song was at least partly inspired by the Stones' "Prodigal Son" but it's a great solo acoustic instrumental version by in my opinion the best fingerstyle guitarist ever.
Tracy Chapman - "Talkin' Bout a Revolution".. just a damn good song..
Bob Dylan - "Masters of War".. or "Chimes of Freedom"... or "Don't Think Twice, It's All Right"... Bob Dylan is the shit
Robert Johnson - "If I Had Possession Over Judgement Day"... this is I think Johnson's best song from a guitar-playing perspective.
Bonnie "Prince" Billy - I See A Darknes (whole album)
