I was trying to make a monk-like character in FFXII so they would only rely on their fists to deal damage. I can't seem to make a good one though so I was wondering if anyone else tried this and what I should do to make mine better if possible.

I started out with Penelo... I don't know why I chose her but it felt like a good fit to me. I gave her the brawler skill and unequipped her dagger and shield. I also gave her an accesory recently that was supposed to increase her no-weapon damage even further. She's still a lightweight though so is there anything else I can do? More equipment or another way to make her stronger?

You can try getting a cat ear's hood from the hunter ranking vendor.  That boosted the dagger damage up a lot and I can assume it would do the same with bare fists.  Other than that, this is a question that would get a better answer at gamefaqs.

= A1: Unarmed ==============================================================
|                                                                            |
| DMG = [11 x RANDOM(1~1.125) - DEF] x STR x (Lv+STR)/256                    |
|
 ============================================================================

After learning the license "Brawler", or equipping the accessory "Amber
Armlet" (enhanced unarmed damage), the formula becomes:

 = A2: Unarmed (with Brawler License) =======================================
|
| DMG = [(Lv+STR)/2 x RANDOM(1~1.125) - DEF] x STR x (Lv+STR)/256            |
|
 ============================================================================

copied and pasted from a gamefaqs faq. i tried thids to since i play monk in ffxi but it really sucks in this game until you get to level 99ish

Oh wow, that's helpful. Can you give me a link to that faq?

Heh, I hope they have something that calculates damage from a gun as well because I just can't seem to understand how Balthier could be doing more damage than Ashe despite his weapon have 1/4 to 1/3 the weapon power of her sword.

Guns in FFXII do a set amount of damage that is independent of your character's stats, apparently. So give it time, and you'll discover that guns are (sadly) worthless.

Also keep in mind that Guns penetrate armor, so those big bad armored guys that your heavy hitters arent doing a lot of damage on are GOING to be out damaged by the lowly gun user.
