The difference is that even though Susan Boyle is actually very unattractive, she doesn't SOUND like it. Hell, you close your eyes while she's singing that Les Mis track, she sounds like the most beautiful Cossette ever played. The woman who did the vocals for Maria's part in the Opera SOUNDED like an obese ugly bitch... who knows how she actually looks. Honestly, she was terrible. But I'd have MUCH rather had Susan Boyle. Hell, I'd take Susan Boyle over just about anyone (in light opera, anyway), she's got a killer set of pipes.

I finally found the full length (read: 7 minute) version of "Went Away" by KOTOKO from Hourglass of Summer (Natsuiro no Sunadokei) not too long ago, and it is the cat's pyjamas. I already loved the short version of the song from the title screen, but it left me wanting more and I got the more. This and "Squall Rise Above" from the Ever17 Vocal Collection are my two favorite video game vocal themes. I just wish Squall Rise Above was actually used in game.

Rune Factory Frontier's opening theme is wicked.
Other favorites include

Suteki da Ne
from FFX, and EVERYTHING from Steambot Chronicles.

I hate to bring up a dead topic, but I LOATHE that song. I prefer whatever the opening song was in the first DDS, it was much more subdued and far less Japanese-Engrish-y. Another World, other than lyrics-wise feels really out of place in the Digital Devil Saga universe.
I also like the SuikoIII opening, the two Xenogears songs, and Radical Dreamers from Chrono Cross.
And maybe Burn My Dread from Persona 3. :P

One I forgot to mention, but listened to the other day: "Depend on You" by Ayumi Hamasaki that opens Thousand Arms. She was still a fledgling pop singer back then and she exploded. That was one of my favorite opening songs and opening sequences.

I have 2 alltime favorites and they're both on your list:
Small of two pieces and eyes on me.
Stars of tears and Spirit (Xenosaga) are other favorites of mine. I really like her voice, was just listening to an Iona album yesterday.
Small of two pieces is probably my favorite, I just wish it had a better solo.
Faye Wong's singing on eyes on me blows my mind, her voice is so unique, I wish she had more english songs, she only has 2 others, at least as far as I know.

Eyes on me is actually about a key moment in FFVIII. It's Raine's thoughts while she is singing in the bar, with Laguna watching her. And she's a singer so the thought of her singing that to herself makes perfect sense.

Fantastic song. Love the instruments they used and the way she delivers every single word is perfect.
